Whole grain Spaghetti with Tomato Basil sauce – simple, easy and delicious meal!

Ingredients:
For the Tomato and basil sauce:
- 3 big fresh ripe Tomatoes, grated
- 1/3 cup fresh Basil, finely chopped
- 1 Onion, finely chopped
- 70g Tomato paste (1 ½ Tbsp)
- 3 Tbsp Olive oil, extra virgin
- A pinch of Salt and Black pepper to taste
For the Spaghetti:
- 1 pack of whole-grain Spaghetti
- 2 Tbsp Olive Oil
- 2 pinches of Salt
Instructions:
- For the sauce: Sauté the onion with the olive oil in a saucepot over high heat.
- Add the grated tomatoes and the tomato paste and stir.
- Add the finely cut fresh basil, pinch of salt, and black pepper, and stir to combine.
- Reduce the heat to low (3/9), let it simmer for 10 minutes and the sauce is ready.
- The whole grain spaghetti needs more time to boil than normal spaghetti.
- For al dente boil them minus 2 minutes from the time mentioned on the package.
- Strain and add them again in the pot off the heat with the olive oil and butter.
- Stir well so all the spaghetti gets a nice coating and they are ready.
- Serve the sauce with the spaghetti and a little grated cheese on top and enjoy!
Notes:
The volume of the basil, uncut, should be about 1 cup which will become 1/3 of the cup after you finely chop it.
