Whole grain Spaghetti with Tomato Basil sauce – simple, easy and delicious meal!

Ingredients:

For the Tomato and basil sauce:

  • 3 big fresh ripe Tomatoes, grated
  • 1/3 cup fresh Basil, finely chopped
  • 1 Onion, finely chopped
  • 70g Tomato paste (1 ½ Tbsp)
  • 3 Tbsp Olive oil, extra virgin
  • A pinch of Salt and Black pepper to taste

For the Spaghetti:

  • 1 pack of whole-grain Spaghetti
  • 2 Tbsp Olive Oil
  • 2 pinches of Salt

Instructions:

  1. For the sauce: Sauté the onion with the olive oil in a saucepot over high heat.
  2. Add the grated tomatoes and the tomato paste and stir.
  3. Add the finely cut fresh basil, pinch of salt, and black pepper, and stir to combine.
  4. Reduce the heat to low (3/9), let it simmer for 10 minutes and the sauce is ready.
  5. The whole grain spaghetti needs more time to boil than normal spaghetti.
  6. For al dente boil them minus 2 minutes from the time mentioned on the package.
  7. Strain and add them again in the pot off the heat with the olive oil and butter.
  8. Stir well so all the spaghetti gets a nice coating and they are ready.
  9. Serve the sauce with the spaghetti and a little grated cheese on top and enjoy!

Notes:

  • The volume of the basil, uncut, should be about 1 cup which will become 1/3 of the cup after you finely chop it.
