Tomato soup with rice
This tomato soup is such a delight! It’s the perfect example of what you can do with simple ingredients perfectly combined together! A simple and easy recipe for a tomato soup with rice that tastes fantastic!



Tomato soup with rice
Prep: 10m | Cook: 15m | Total: 25m | Serves: 4
Ingredients:
- 500g fresh grated tomatoes, peeled and deseeded (4-5 tomatoes)
- 1 tsp Fresh basil, finely chopped
- 100g rice labeled for soups or pudding, washed and drained (1/3 cup).
- 1 clove of garlic, crushed
- 2 cups of water
- 20g Butter unsalted (1 Tbsp)
- 1 Tbsp cream cheese for every serving
- 1 pinch of Salt
- Freshly grounded Black pepper
Instructions:
- Peel and deseed the tomatoes.
- Use a food processor or a blender to blend the tomatoes.
- Add them in a pot over high heat and bring to a boil.
- Add 2 cups of water followed by 1 clove of garlic crushed, and a pinch of salt.
- Reduce the heat and let it simmer for about 15 minutes or until the rice is ready, which also means our soup is ready.
- After the soup is ready at 1 Tbsp of unsalted butter and stir until it melts.
- Serve your soup with 1 Tbsp cream cheese, a little finely chopped fresh basil, and a pinch of freshly grounded black pepper.
