This recipe for Greek Briam is a new and improved version of an older Briam recipe that I uploaded a few years back.
I would characterize this version as the perfected recipe that I have settled on and cooking every time I bake Briam. Let me show you how to make this very easy, vegan dish and you won’t believe how tasty a few baked vegetables can be!

Ingredients:
- 4 large Onions, cut into rounds
- 2 Potatoes, cut into rounds
- 10 Zucchini, cut into thick rounds
- 3 Eggplants (Aubergine), cut into rounds
- 4 large Tomatoes, cut into rounds
- 5-6 colored Peppers, cut into slices
- 1 cup of Parsley, finely chopped
- 3 cloves of Garlic, coarsely chopped
- 3/4 cup of Olive Oil, extra virgin
- 2 pinches of dried Spearmint
- 2-3 pinches of Black pepper
- 4-5 pinches of Salt
Instructions:
- Wash and cut all the vegetables into round slices of the same thickness, except for the zucchini which should be twice as thick as the other vegetables.
- Place all the vegetables in a large baking pan and add the garlic, parsley, spearmint, salt, pepper, olive oil, and massage them so all vegetables get a nice coating.
- Don’t add any water to your baking tray because the vegetables will produce, as they bake, plenty of juices.
- Bake at 200C / 400F for approximately 1 hour.
- Check the food at around 40 minutes, give them a good mix, and return it to the oven until it’s cooked.
- Serve with Feta cheese and enjoy!
