Steak with Amaranth Greens and zucchini – Easy and healthy dinner idea!

Prep: 20m | Cook: 1h | Total: 1h 20m | Serves: 1-2

Ingredients:

  • 1 pork Steak 300g
  • 250g Amaranth Greens
  • 250g small Zucchini
  • 1 pinch of Oregano
  • Lemon Juice
  • Olive Oil, extra virgin
  • Black pepper
  • Salt to taste

Instructions:

  1. Add the zucchini with the Amaranth Greens into a pot with boiling water and boil them for 8 minutes. Drain them and set them aside.
  2. Season the pork steak with salt and pepper on all sides and add 1 pinch of oregano and 1/2 Tbsp of Olive oil.
  3. Bake the steak for 1 hour at 180C in the oven or 40 to 45 minutes in the air fryer.
  4. Add a drizzle of olive oil and lemon juice on the greens and zucchini and serve them on a plate with the steak.

Notes:

  • Depending on the weight of the steak, it may take less or more time if you cook it in the air fryer.
  • Clean the Amaranth Greens by cutting their stem and wash them by changing 2-3 waters before putting them in the pot.
  • If the zucchinis are small, simply cut their ends, if they are medium, cut them in half, and if they are very large, cut them into quarters.
