Steak with Amaranth Greens and zucchini – Easy and healthy dinner idea!

Ingredients:
- 1 pork Steak 300g
- 250g Amaranth Greens
- 250g small Zucchini
- 1 pinch of Oregano
- Lemon Juice
- Olive Oil, extra virgin
- Black pepper
- Salt to taste
Instructions:
- Add the zucchini with the Amaranth Greens into a pot with boiling water and boil them for 8 minutes. Drain them and set them aside.
- Season the pork steak with salt and pepper on all sides and add 1 pinch of oregano and 1/2 Tbsp of Olive oil.
- Bake the steak for 1 hour at 180C in the oven or 40 to 45 minutes in the air fryer.
- Add a drizzle of olive oil and lemon juice on the greens and zucchini and serve them on a plate with the steak.
Notes:
- Depending on the weight of the steak, it may take less or more time if you cook it in the air fryer.
- Clean the Amaranth Greens by cutting their stem and wash them by changing 2-3 waters before putting them in the pot.
- If the zucchinis are small, simply cut their ends, if they are medium, cut them in half, and if they are very large, cut them into quarters.
