Oyster Mushrooms with Cabbage salad – Fast and easy meal!

Ingredients:
- 250g Oyster Mushrooms, cut into slices
- 2 cloves of Garlic, roughly chopped
- 1 cup white Cabbage, cut into strips
- 1 Carrot, grated
- 1 handful of Parsley, finely chopped
- 1/2 Onion, cut into slices
- Juice from half a Lemon
- 1 pinch of Salt
- 2 Tbsp Olive Oil
- Salt / Pepper
Instructions:
- Place a non-stick skillet over high heat and sauté the garlic with 2 Tbsp Olive Oil, and as soon as it’s fragrant, add the Mushrooms.
- Season them with salt and pepper, add the parsley, and let it sauté until golden (about 2 minutes).
- Cut the cabbage and onion into strips, and grate the carrot.
- Add them to a bowl and pour a dash of olive oil, the juice of half a lemon, and a pinch of salt.
- Serve the sautéed mushrooms with the Cabbage salad and enjoy!
