Oven baked Fish cakes with Beets and Cucumber salad – A truly delicious meal!

Ingredients:

For the Fish Cakes:

  • 1 kg (35oz) Hake Fish, fillet deboned
  • 2 Onions, very finely cut /blended*
  • 2 Carrots, grated
  • 2 Tbsp Mustard, mild
  • 2 Tbsp Olive oil (adjustable) 
  • 4 Tbsp toasted Breadcrumbs 
  • 1 cup of Parsley, finely chopped
  • 5 Cloves of Garlic, minced
  • 1/3 cup fresh Spearmint, finely cut
  • 1 pinch of dry Spearmint
  • 1 small pinch of Oregano
  • A pinch of Salt and Pepper

For the salad:

  • 3 Beets, cut into chunks
  • 1 Cucumber, cut into wide strips
  • Red wine Vinegar
  • Olive Oil
  • 1/2 tsp Chia seeds (optional)

Instructions:

  1. Add the fish to a pot with boiling water over high heat and let it boil with an open lid for 5 minutes.
  2. Debone the fish and add it to a large bowl.
  3. Prepare all the ingredients as I mentioned in the ingredient instructions above, add them to the bowl with the fish, and mix well until you get a soft but pliable mixture.
  4. Cover the mixture with plastic wrap and let it rest in the refrigerator for 30 minutes.
  5. Shape them like small burger patties and place them on a baking tray with parchment paper.
  6. Bake at 200C for 20 minutes and then flip them to bake for 7 more minutes.
  7. Serve the beets and cucumber salad on a plate, top it with a little olive oil, red wine vinegar, 1 pinch of salt, and 1/2 tsp chia seeds (optional).
  8. Add 3 fish cakes to a plate with the beets and cucumber salad and enjoy!

Notes:

  • You may have to adjust the amount of Olive Oil and breadcrumbs until you get a pliable mixture.
  • You may add whatever fish you like as long as it does not have a lot of bones.
  • For 1 kg of raw cleaned fish you will have to buy more than a kilo. I would estimate around 1.2 kg.
  • If you use the kitchen processor to chop the onion into very small pieces then you should drain them from the excess water afterwards.
