How to make homemade Cherry syrup

This recipe for homemade Cherry Syrup is very easy and fast!  Also in the video below, I’m going to show you how to remove the core from the Cherries with a skewer, without using any special tools. If you do not have a skewer you can replace it with the back of a spoon or chopsticks or any other similar object you may have in your kitchen.

Wash and drain the cherries.

Remove their core and set it aside.

Add 2 Tbsp water to the bowl where you store the Cherry cores and strain them keeping their juice.

Add the sugar, cherry juice and lemon juice in a saucepot over high heat

When they are starting to boil add the cherries, with their core removed, and 2 Tbsp of glucose.

Bring to a boil and lower the heat.

Let it simmer for 30min.

Remove the white foam that they will produce on the surface.

Add it in two sterilized jars 330ml each.

Important tips you should know about syrup making

  • Stir gently only with a wooden spoon because a wooden spoon doesn’t conduct the heat. A metal spoon can induce crystallization as it conducts heat in local areas it touches. After the syrup is cooked then you can use any type of utensil to extract it from the pot.
  • The glucose and the lemon juice in the Cherry syrup help to prevent crystallization and also help with the preservation of the syrup.
  • If you preserve the syrup in an air-tight sterilized jar it can last for more than a year at room temperature.

Where and how to use your cherry syrup

  • You can add 3 Tbsp Cherry syrup to a glass of water and have a delicious Cherry drink!
  • 1 or 2 tsp are enough for a bowl of ice cream.
  • For cocktails ratio, it depends on your creations but you can start with 2 Tbsp. Try it on vodka and cherry!

Ingredients:

  • 500g Fresh cherries, with their core removed
  • 400g Plain sugar (1 and 1/3 cups)
  • Lemon Juice from ½ a lemon
  • 2 Tbsp Glucose
  • 2 Tbsp Water
