Healthy Chicken Salad that tastes absolutely amazing!!!

Prep: 10m | Rest: 1h | Cook: 20m | Total: 1h 30m | Serves: 2

Ingredients:

  • 1 Chicken breast, marinated
  • 1/2 Lettuce, cut into strips
  • 1 handful of cherry tomatoes, cut in half
  • 1 small Onion, cut into slices
  • 1 Tbsp Olive oil
  • Juice of 1/2 a Lemon
  • Salt to taste

For the marinade:

  • 1 Tbsp Olive Oil
  • 1 clove of Garlic, crushed
  • 1 tsp smoked Paprika
  • 1 pinch of Salt

Instructions:

  1. Place the chicken breasts in a bowl and poke them with a fork.
  2. Add 1 pinch of salt, 1 clove of garlic crushed, 1 tsp smoked paprika, and 1 Tbsp of Olive Oil.
  3. Massage the chicken so it will get a nice coating, cover it with plastic wrap, and let it rest in the fridge for 1 hour.
  4. Bake it on the air fryer at 200C for 20 minutes. Or you can also bake it for the same amount of time in an oven with convection.
  5. Cut the lettuce into strips, the cherry tomatoes into half, and the onion into slices.
  6. Place them all on a plate, add the baked chicken breast, and just before you serve it add a little olive oil, a pinch of salt, and the juice of half a lemon.
  7. An easy, healthy, and delicious Chicken salad is ready for you to enjoy!
