Green Peas with Potatoes in Tomato Sauce that will rock your world!

You should definitely try this simple and healthy meal because you will be surprised what a few ingredients can do to elevate the humble green peas on your plate!



Green Peas with Potatoes in Tomato Sauce that will rock your world!

Ingredients:
- 500g Green Peas, frozen
- 2 medium Potatoes, cut into chunks
- 1 Onion, finely chopped
- 3 cloves of Garlic, chopped
- 4 ripe Tomatoes, grated
- 3 Carrots, cut into rounds
- 5 Tbsp Olive Oil, divided
- 1/3 cup Dill, finely chopped
- Salt / Pepper to taste
Instructions:
- Saute the onion with the 3 Tbsp Olive Oil in a large saucepan until transparent and then add the garlic.
- Season the potatoes with salt and pepper and add them to the pot together with the carrots.
- Sauté them for 1 minute and then pour half of the tomatoes and bring to a boil.
- Add the peas, the dill, the rest of the tomatoes, 2 Tbsp Olive oil, and a pinch of salt and pepper.
- Mix well and close the lid. Bring it to a boil, lower the heat, and simmer for 30 minutes.
- Serve with feta cheese and enjoy!
Notes:
Seasoning the potatoes with salt and pepper just before you add them to the pot is a very important step for developing great flavor for this dish; you should not skip it!
