Mini Greek Feta cheese pies very fast and easy recipe
Ingredients for the dough:
- 380g all-purpose flour (2 cups)
- 200g Greek yogurt (1 store-bought yogurt cup)
- 175g sunflower oil (measure it with the yogurt cup)
- 6g baking powder (1 Tbsp, flat)
- 25g Unsalted Butter, room temperature. (1 generous Tbsp)
- 1 tsp salt, flat
Ingredients for the filling:
- 110g Feta, crushed
- ½ tsp yogurt
- 1 egg
- Freshly grounded black pepper (optional)
Instructions:
- Add all the ingredients for the dough in a bowl, except the butter, and mix well. (about 5 minutes)*
- Add the butter, which should be at room temperature, and spread it on the dough to go everywhere and then fold it a few times to integrate it with the rest of the ingredients. (see video)
- Rest the dough for 30 minutes covered with a kitchen towel.
- Prepare the filling by crushing the feta with a fork and mixing it with the egg, yogurt, and black pepper.
- After 30 minutes, pinch a piece of the dough the size of a medium walnut (about 45-50gr), and with your palms and circular movements shape into a ball.
- Press it with your palms on the counter, or press it with the bottom of a pan, or a bowl, to open to a diameter of about 11 cm. (see the video above)
- Add the filling by placing ½ tsp on the lower part of your rounded dough, flip the other half closing it like a half-moon, and press the edges with your fingers to close them.
- Place them in a baking tray with parchment paper.
- Apply egg wash on top (1 egg yolk, 2 tbsp water)
- Bake them in a preheated oven at 180C /350F, middle rack, for about 25-30 minutes until they are golden brown.
Notes:
- If you measure all the ingredients just add them in the bowl (except the butter) and mix to combine, but if you use cup measurements since every household cup is a little different add the flour little by little until you get a soft and pliable dough.
- The dough and filling measurements that I give you above, are exactly for 1 baking tray. If you run out of dough but you still have a lot of filling or vice versa then you did something wrong.
- The dough must be oily and soft.
- If you need to refrigerate the dough, then you should remove from the fridge 1 hour before you are ready to make your pies as it needs to be in room temperature.
