Easy and fast Chicken Noodle Soup with Fide Noodles and vegetables, perfect for cold winter days!

Chicken Noodle Soup perfect for cold winter days!

Ingredients:
- 1 medium Chicken, (about 1.5 kg)
- 1 ball (nest) of Fide Noodles (angel hair), cut into 4
- 1 Zucchini, diced
- 1 Carrot, diced
- 5 Tbsp Olive oil, extra virgin
- Juice of 2 Lemons
- 1 generous Tbsp Butter (optional)
- 1 pinch Salt / Pepper
- 250ml Water for boiling the vegetables
- 1.5 – 2 liters of Water for the Chicken
Instructions:
- Add the chicken to a pot with 1.5 – 2 liters of water, bring to a boil over high heat, and skim off the foam that will rise to the surface.
- Pour the olive oil, lemon juice, 1 pinch of salt and pepper and let them BOIL over high heat for 5-7 minutes.
- Lower the heat and SIMMER for about 30 minutes.
- In another pot, pour 250ml of water (3/4 cup) and add the carrot and zucchini cubes. As soon as they boil, turn off the heat and leave them in the pot for 5 minutes.
- Drain them but keep their water to pour into the pot with the chicken.
- Melt 1 generous Tbsp of butter in the pot and sauté the drained vegetables until they get a nice coating (Optional step).
- After the chicken is cooked, place it in a bowl and cover it to keep it warm.
- Break the Fide Noodles into quarters with our hands.
- Turn on the heat in the pot that the chicken was boiling and as soon as it starts boiling add in the Noodles and turn off the heat.
- Stir with a spoon every now and then and the noodles will be ready in less than 5 minutes.
- Combine the pot in which the vegetables were boiling with the Noodles and the chicken and the soup is ready!
- I like to serve it with Feta cheese and freshly baked bread!
Notes:
- One ball (nest) of Fide Noodles (angel hair) is enough for 1L of water because it triples its volume after it’s cooked.
- If you prefer not to include the butter in this soup then: Remove the chicken from the pot after it’s cooked and bring the soup to a boil. Add the noodles together with the cubed vegetables and turn off the heat. They will be ready in 5 minutes.
