Cauliflower Omelet with Tomato and sour Feta cheese
A delicious Cauliflower omelet like you’ve never had before!



Cauliflower Omelet with Tomato and sour Feta cheese

Ingredients:
- 3-4 Cauliflower florets, boiled
- 2 Eggs, lightly beaten
- 1 Tomato, cubed
- 1 Carrot, cubed
- 75g Xinomizithra or Feta cheese
- 2 Tbsp of Olive Oil
- Salt / Pepper
Instructions:
- Boil the cauliflower for 10 minutes and then add the carrots and continue to boil them all together for 5 more minutes.
- Cut the cauliflower into slices, season them with salt and pepper, and set them aside.
- Crumble the feta, and lightly beat the eggs.
- Dip the cauliflower slices into the eggs and set them aside.
- Add 2 Tbsp Olive oil in a non-stick skillet over high heat and add in the cubed tomato.
- As soon as it withers add the feta followed by the cauliflower slices and the leftover beaten eggs and reduce the heat to medium.
- Let it cook for about 1 minute until the egg settles and then flip them.
- Add in the cubed carrot at the end and the cauliflower omelet is ready!
