Cauliflower Omelet with Tomato and sour Feta cheese

A delicious Cauliflower omelet like you’ve never had before!

Cauliflower Omelet with Tomato and sour Feta cheese

Prep: 5m | Cook: 15m | Total: 20m | Serves: 2

Ingredients:

  • 3-4 Cauliflower florets, boiled
  • 2 Eggs, lightly beaten
  • 1 Tomato, cubed
  • 1 Carrot, cubed
  • 75g Xinomizithra or Feta cheese
  • 2 Tbsp of Olive Oil
  • Salt / Pepper

Instructions:

  1. Boil the cauliflower for 10 minutes and then add the carrots and continue to boil them all together for 5 more minutes.
  2. Cut the cauliflower into slices, season them with salt and pepper, and set them aside.
  3. Crumble the feta, and lightly beat the eggs.
  4. Dip the cauliflower slices into the eggs and set them aside.
  5. Add 2 Tbsp Olive oil in a non-stick skillet over high heat and add in the cubed tomato.
  6. As soon as it withers add the feta followed by the cauliflower slices and the leftover beaten eggs and reduce the heat to medium.
  7. Let it cook for about 1 minute until the egg settles and then flip them.
  8. Add in the cubed carrot at the end and the cauliflower omelet is ready!
