Black Eyed Pea salad – Refreshing and absolutely delicious!

Ingredients:
- 250gr Black-eyed pea
- 1 handful cherry Tomatoes, quartered
- 1 small Cucumber, diced
- 1 cup of Parsley, finely chopped
- 1/2 Lemon juice, per serving
- 1 Onion, very finely chopped
- 1 Spring Onion, cut into rings
- 2 Tbsp Olive Oil
- Salt to taste
Instructions:
- Wash the black-eyed peas and drain them.
- Add them to a pot with boiling water then reduce the heat and let them simmer for 7 minutes.
- Drain them in your kitchen sink, add them again into the pot with fresh water, and bring to a boil.
- Reduce the heat to low and let them simmer for about 30 min. Depending on the brand, variety, and age of the beans some require less and others more time to cook.
- Cut all ingredients for the salad, add them to a bowl, add the cooked black-eyed pea*, and mix well.
- Just before you are ready to serve add the lemon juice, the olive oil, and salt.
- I like to serve this salad with fish but it can also stand on its own as a full vegan meal option.
Notes:
- It serves 2 people if you eat it as a salad or 4 servings if you use it as a side dish.
- If the boiled beans stay at room temperature without any liquid surrounding them for a long time, they start to peel their skin. They must be either soaked in water (or other liquid) or kept in the fridge until you serve them.
