Anchovy oven baked with Garlic, Oregano and Lemon Potatoes

This is a simple but very tasty dish that highlights the cooking philosophy of the Mediterranean diet. If you can find Anchovy easily in your country don’t hesitate to make it because it’s truly delicious!

What to serve oven-baked anchovy with

I like to serve this dish with “Horta” (greens) or a green salad. The greens I used for this dish are called “Stamnagathi” in Greek and in English Spiny Chicory or Coast Chicory.

If you are wondering how to cook the Spiny Chicory is very easy just remove a small part of their roots with a knife, wash them and add them to a pot with boiling water over high heat for 5-6 minutes. They are served with olive oil and lemon juice.

Anchovy oven baked with Garlic, Oregano and Lemon Potatoes

Prep: 15m | Cook: 50m | Total: 1h 5m | Serves: 4

Ingredients:

  • 1 kg fresh Anchovy (35oz)
  • 3-4 Potatoes cut into wedges
  • 3 pinch of Oregano, divided
  • 3 cloves of Garlic roughly chopped, divided
  • 6 Tbsp Olive oil, divided
  • Lemon Juice from 1,5 lemons, divided
  • 2 pinch salt and pepper, divided

Instructions:

  1. Clean the Anchovy wash and drain them. (Watch the video)*
  2. Cut the potatoes into wedges and place them in a bowl or in your medium size baking tray.
  3. Add to the potatoes a pinch of Salt and pepper, 1.5 pinches of Oregano, half the Lemon juice from 1.5 Lemon, 1.5 Garlic roughly chopped, and 2 Tbsp Olive oil.
  4. Mix well and place them on the left side of the baking tray.
  5. Add the cleaned Anchovy to the right side of the baking tray and season them with 1 pinch of Salt and pepper, 1.5 pinches of Oregano, half the Lemon juice from 1.5 Lemon, 1.5 Garlic roughly chopped, and 2 Tbsp Olive oil.
  6. Mix gently so you do not damage their skin.
  7. Bake at 200C / 390F, middle rack, for 10 minutes, and remove the Anchovy.
  8. Spread the potatoes to your baking tray.
  9. Bake for 40 minutes and your food is ready!
  10. Serve with Greens or a green salad. I used Spiny Chicory greens in my photos and video.
